(1)Ice cream:Avoid forming large ice crystal,improve mouthfeel and provide creamy texture,improve stabilization.
(2)Snakes:Improve process properties,increase swelling rate,provide a fine and uniform crumb structure,reduce staling rate.
(3)Meat,sausage and ham:Improve water storage capacity,to prevent the oil-water separation
